Pistachio is a small genus of evergreen or deciduous trees or shrubs of the Sumahov family, common in the subtropical, partly tropical regions of the Old and New Worlds.
Fruits contain up to 3.5% sucrose, organic acids (acetic), 4.6% proteins, fiber, 48-76% fatty oil, consisting of 80% of unsaturated acids, tocopherols, higher fatty acids, anthocyanins.
They contain a lot of vitamin E, a well-known natural antioxidant, rejuvenating the body. Kernels are nutritious and tasty, they are consumed fresh, toasted and salted, used in confectionery, sausage production, as well as in the production of cheese.
